The challenge

Since 2019, social change and the pandemic have created new behaviours across foodservice. In 2021 the Hong Kong Federation of Restaurants and Related Trades Charitable Foundation launched the research project “Post-COVID New Norm for Restaurant Businesses” to find opportunities among the threats and help the industry thrive again.

Our approach

We heard from consumers, restaurant operators and suppliers across Chinese, Western and other Asian cuisines, from frontline staff to managers. Desk research, in-depth interviews, focus groups and a survey reached more than 1,100 respondents and 25 experts, to identify and validate the ten most important trends for the next three to five years.

The result

A published report on ten trends shaping the “new normal”, with more than 20 success stories on human-centric customer experience, foodservice technology and how categories and dining spaces are being redefined. Over 10,000 printed copies went to operators and stakeholders across Hong Kong, helping businesses of every size and cuisine plan for short- and long-term threats.
